Once upon a time, a sweet (but flakey) gal named Coco Nut met a sweet (and rich) guy named Choc O’Late (okay, that one was a stretch.) It was pretty clear they were made for each other so they got married, had a baby and named him Mac A. Roon.
I love this flavor combination. I assume if you’re reading this you do too. And if you’ve never made coconut macaroons before, you should. There is not an easier, more delicious, delightful, delectable treat on this planet. (Yet… )
I mean, come on. How could you go wrong when a couple of lookers like this get together and procreate. If this were Hollywood everyone would be tweeting about them under the combined name “CHOCONUT”:
Chocolate Dipped Coconut Macaroons
Makes 12 Macaroons
2 cups sweetened coconut
2 tbsp sugar
2 egg whites
1 tsp vanilla
2 cups milk chocolate chips
1 tbsp shortening
Preheat oven to 325 degrees. Line a sheet pan with parchment paper. Combine coconut, sugar, egg whites and vanilla in a medium bowl using your hands so the coconut gets a nice eggy massage. I know, this feels gross but it’s really the only way to be sure that all of the flakes are getting what they need from their support team. Also using your hands, form little mounds or ‘haystacks’ on the prepared sheet pan.
Bake in the preheated oven for 16 – 18 minutes, rotating the sheet at the 8 minute mark. Remove from the oven when the tips of the coconut start to look all toasty and delicious.
While those little sweeties are cooling, put the chocolate and shortening in a microwave safe bowl and heat for 30 seconds. Stir to finish melting and let it cool for a few minutes.
Dip just the bottoms of the macaroons in the melted chocolate and return to the parchment paper lined sheet pan. Refrigerate for a few hours or until the chocolate is set.
I fought my husband for the first one. (Not a real fight, we borrowed “picky eater’s” Rock’em Sock’em Robots and battled to the head pop.) He won. He’s probably eating the last one right now in bed while I’m typing this. No doubt I’ll be picking coconut flakes out of my butt crack tomorrow morning.
