We have gone from one contagiously funky ailment to the next for what feels like two solid months at our house. It doesn’t help that Finley uses everything but a tissue, as a tissue. Including my favorite faux fur blanket. Dang-nabbit.

Now that I’m officially on the mend from the most recent funkfest, I feel it’s my duty to share this recipe with you because…

Creamy Chicken SoupScientific Fact #2: Chicken soup cures what ails ‘ya.*

Scientific Fact #3: Homemade chicken soup is waaaaay better than canned.* 

Creamy Chicken Soup
(makes 4 – 6 servings)
4 boneless, skinless chicken thighs
2 – 3 tbsp olive oil
2 tbsp fresh thyme leaves (chopped)
2 tbsp fresh parsley (chopped)
2 tsp salt
1/4 cup butter
1/2 cup flour
1 small white onion (diced)
2 small cloves garlic (chopped)
2 ribs celery (diced)
2 carrots (sliced)
1 cup fresh mushrooms (sliced)
5 cups chicken broth
2 bay leaves
1 cup whole milk
1 cup heavy cream
salt & pepper to taste

Preheat oven to 425 degrees. In a small bowl, combine the salt, parsley and thyme. Arrange the chicken thighs on a sheet pan, brush with olive oil on both sides and evenly sprinkle with the salt, parsley, thyme blend then massage the spices into the meat. Roast in the preheated oven for 20 – 25 minutes or until the juices run clear. Remove from the oven and set aside to rest.

In a dutch oven or large stock pot, melt the butter and add the onions, garlic, celery,  carrots and mushrooms. Cook until the onions and celery become tender and translucent. Add the flour and stir to coat the veggies. Add the chicken broth and bring to a boil, whisking constantly. Add the bay leaf, reduce the heat and simmer for 15 minutes.

While the soup is simmering, chop the roasted chicken into bite-sized chunks. Add the chicken to the soup and return to a boil. Reduce the heat to low and whisk in the milk and cream. Find and remove the bay leaves, season the soup with salt and pepper then simmer for another 15 minutes.  Serve with a sprinkle of fresh parsley. (And maybe some warm garlic cheddar biscuits.)
