Watermelon-Agua-Fresca

What’s better than fresh watermelon on a hot summer afternoon? Fresh watermelon blended with lemon juice, a wee-bit of sugar, and ice. That’s what.

I loooooooove agua fresca. I started making them at home after the fresh pineapple blend at Los Reyes de la Torta started haunting my dreams. That, and their pork belly torta with fresh avocado.

Yes. Gimme one of each, right meow.

Seriously though, there isn’t a more simple, fresh, bright summer beverage than a fresh fruit agua fresca. Watermelon is one of my favorites because it blends so smoothly and is inherently sweet so there’s no need for a ton of added sugar. And the color just screams ‘ DRINK ME NOW. I WILL MAKE YOU FEEL VERY HAPPY.’

Fresh Watermelon Agua Fresca
(makes 4 servings)
4 cups fresh watermelon (seeded and cubed)
3 – 4 tbsp granulated sugar (adjust according to your melon’s sweetness… how naughty did that sound?)
2 tbsp fresh lemon juice
1 cup ice
Fresh mint leaves for garnish

Throw the watermelon, sugar and lemon juice in the blender and puree until smooth. Add the ice and blend until the ice is completely crushed and free of large chunks. Serve with a sprig of fresh mint leaves.

My kids will drink the entire pitcher of this stuff if left unattended. And if kids love it, it must be good.

P.S. if you have any left over, it’s delicious over additional ice with a shot of vodka or tequila.

Yup. Everybody’s hands go up.
